Getting front calipers back onto new(ish) discs
So I am having trouble getting the front calipers back onto my new(ish) discs.

Today I jammed a couple of flat-blade butter knives and a big wide flathead screwdriver between the pads. While I held a bit of outward pressure, I released some fluid out of the bleed nipple (lol, nipple).
I gave the pads a bit more of a 'elbow grease jimmy'.

Then I could not get the bloody calipers back onto the discs. The discs are about 0.5mm thicker than the old ones I am replacing.

I trust someone here will have some suggestions about what to do next (maybe I should piss on it?).

Try pissing on em
If that doesn't work try a g clamp to push in the pistons.
Or even some big enough multi grips

and put an old one in if you still have them. saves damaging the face of the piston in any way (only a minimal chance anyway, but lessening it isnt bad)

G clamp is the best.

But why dont you overhaul the callipers if you have fitted new discs? Thrown in some braided lines too and enjoy all round better braking

Are your pistons clean?

Clean pistons are easier to push back.

If you have grime/rust or just brake build up this can prevent the piston going back in. Use some scotch brite and some rubber grease to help the piston go back in further.
