    Anyone made Biltong?

    Im looking at making a batch of Biltong soon and have a great chilli spice rub recipe... Basically rock salt, black pepper, coriander seed powder and chilli. might try a batch with smoked paprika too.

    It will be my first attempt and Im just wondering if anyone else has tried this before and can offer any tips from their experience. My main concern is to whether or not build a dehydrating box or use the fan forced oven.

    any tips would be great.

    i make jerky all the time. All i use is the fan forced oven on it's lowest setting. Works a treat! If you use liquids eg soy sauce, chilli oil etc, dont use too much of it as it will take forever to dehydrate.

    unless you don't intend on using your oven for over a month, build a dehydration box. Their pretty simple, all you need is a wooden/metal box with a pole across the top to hang the biltong from, a tungsten light bulb at the bottom and a meat-tray underneath to catch the juices.

    Big jerky thread ages ago - as far as forumers go dsfgh is the man regarding curing and smoking.

    I pulled out my dryer machine in order to make some jerky this summer.

    I was just going to buy one of those flavour kits to start with. Then after that begin making my own rubs.

    I know its a pain having old threads resurected.

    Just got paid, in the market for some fucking jerky. Perused a couple sites.
    Does anyone recommend a site they've bought from before?
    Also has anyone picked up jerky other than beef? I had venison back in the states and would be more than keen to try a few different meats aswell as flavours.
